Squash + Zucchini

  • Organic Costata Romanesco Zucchini & Flowers

    Costata Romanesco is the only squash we grow on the farm and apparently Deborah Madison has made the same decision. She likes to slice it in rounds, slow cook it until it is golden in spots, and then combine it with a variety of herbs, toasted pine nuts and Parmigiano-Reggiano.
